Ghraybeh

Ingredients:

-  60 grams powdered sugar but this depends on how sweet do you like them, if you in general like sweet cookies, then add 40 more grams

- 125  grams ghee/butter

- 250  grams flour

- Pistachios

 

Preparation:

1.  First you need to mix the ghee/butter with the powdered sugar by hand. Then add the flour to the mixture and mix until it's well combined. The dough should be nice and soft and should not stick to your hands.

2.  Place the dough ball into a bowl, cover with a plastic wrap, and refrigerate for about 1 hour.

Cherry Kabab

Ingredients:

•             2 Tablespooons Olive Oil

•             1 Cup Yellow Onion, Finely Diced

•             4 Cloves Garlic, Minced

•             2 Pounds Ground Lamb

•             1 teaspoon Ground Allspice

•             1 teaspoon Ground Cinnamon

•             ½ teaspoon Freshly Ground Black Pepper

•             ½ teaspoon Salt

•             1 Pound Fresh Bing Cherries

•             2 Sticks Cinnamon

Maldoum (Eggplant and Vegetable Casserole with Ground Beef)

Ingredients:

•           1.5 lbs 90% ground beef or lamb

•           3 medium eggplants

•           2 large tomatoes

•           1/2 cup tomato puree

•           1 1/2 tsp salt, to taste

•           1 1/2 allspice, to taste

•           1 tsp paprika, to taste

Roz bil halib (Rice Pudding)

Ingredients:

4 cups milk.

1/3 cup short grain rice (known here as Egyptian rice) washed.

1/4 cup sugar.

 

qaimar mixture:

2 Tablespoons rose water.

1 teaspoon vanilla extract.

2 Tablespoons corn starch.

3 Tablespoons qaimar (you can replace it with cream).

Chopped pistachios, toasted.

 

Preparation:

1) In a large pan mix milk, rice, sugar, bringing to boil then reduce the heat, let it simmer for 1 1/2 hour.

Yalanji – Vegetarian Stuffed Vine Leaves

Ingredients:

-2 cups of short grain rice

-2 big tomatoes diced

-Small handful of mint leaves

-A bunch of flat leaf parsley chopped (including stalks)

-1 large white onion diced

-Small cup of pomegranate molasses

-1 teaspoon of red or green chili

-2 sweet capsicums diced

-2 spoons of tomato paste or soy sauce
